Seared Shrimp and Scallops with Thai Noodles

Seared Shrimp and Scallops with Thai Noodles.

  • 4 to 6 Shrimp
  • 4 to 6 Scallops
  • 1 box Thai rice noodles (cooked)
  • ¼ cup chunky peanut butter
  • ¼ cup soy sauce
  • fresh ginger and garlic to taste
  • 1 cup shredded carrots
  • 1 cup quartered mushrooms
  • 1 cup thinly sliced onion
  • Peanut oil

In a skillet or wok, heat oil and sear shrimp and scallops until fully cooked, set aside. In the same pan, sauté garlic and ginger and add vegetables heat soy sauce, add peanut butter. Once soy and peanut butter is well incorporated, toss in noodles and shrimp and scallops.
